I suppose many people (like me) who come from the old Toolbox world are used to using SetControlVisibility().

To answer the question, there are no single method solutions for hiding controls, and if you ask me that is a good thing.

While I agree that in many situations it is better UI to disable rather than hide controls, IMHO there are situations where is is perfectly acceptable (and better) to hide them. If you find yourself in such a situation, there isn't really a neat way of doing it in Cocoa.
