Good books:

C course: Learn C on the Macintosh by Dave Mark
(a little old, but a very good book,
and the C part hasn't changed at all)
C reference: Kernighan and Ritchie: The C programming language.

Cocoa course: Aaron Hillegass' book (forgot the name again)
Cocoa ref: http://cocoadevcentral.com, http://cocoa.mamasam.com

Apart from that, you can take any programming class you can find, which should teach you the basics. Don't be afraid to learn several languages, or languages that aren't important on the Mac. The Mac itself used to be a Pascal machine, then C, then C++ was the langue du jour, now we're doing ObjC, and many programmers use Java today. Languages will change. But be sure it's a language which you can work with at home, so you can practice. Theory *always* has to be backed by practice, if you want it to be successful.

BTW -- there's already been a previous thread about this topic, you might want to look it up in the archives.
