Open the menu in IB, and double-click to the right of the menu item's
title (where the shortcut is shown if the menu item already has one). A
box should appear around that area. Then, just hit the key combination
that you want and it will be entered as the shortcut. This way you can
even do some cool shortcuts not involving the command key - for
instance the function and arrow keys. Shame the help key is intercepted
somewhere higher up the responder chain... Likewise numlock and del
can't be used on their own, but most other 'special' keys can.
If you want to have no shortcut key you can double-click and press
'del' (the forward delete key) or open up the inspector panel and
delete the contents of the 'key equivalent' text field in the
attributes section.
