Override a Finder command

Hi list,
I would like to override a Finder command such a way when the user chooses
the command "Connect To Server", instead of launching the "Connect To Server
tool" of the Finder, he launches my tool "iConnect".
Or at least I would like to add a menu item to an existing Finder menu or a
new menu to the Finder menu bar.

Can I do that?
If yes, how?
Should I show or not my application icon in the dock?
