It really depends on the way you learn and what your programming goals are ...

I think that Aaron Hillegass' "Cocoa Programming of Mac OS X" may be the best introduction to Cocoa. Yet, it is perhaps excessively focused on GUI programming, and thus describes via example how to get started using Interface Builder with Cocoa's AppKit (which apparently is being renamed by Apple to the "Application Framework"). Aaron and Mark Dairymple have also just published "Core Mac OS X And Unix Programing," which is on my buy-list.

About a week ago, I bought "Cocoa Programming" by Scott Anguish et al., as a more general reference. I think that many would regard this 1245 page work as the Cocoa "Bible." These are same folks who bring us Stepwise.com and Scott is a frequent contributor to this list.

However, if you really must have your Cocoa "spoon-fed," then also consider Bill Cheeseman's "Cocoa Recipes for Mac OS X - The Vermont Recipes." Personally, I find the rather verbose style of "Cocoa Recipes..." to be, at best, cumbersome. Mr Cheeseman has also published "The AppleScript SourceBook," which appears to be written in a similar vain.
