You could install Linux on a partition, and use MOL <http://www.maconlinux.org> to run them under that.

It would be *really* nice if MOL could use Mac OS X as the host OS. Then you could run as many instances of older OSes as you needed to, without ever having to partition your drive or reboot the host OS. There's nothing on the site that mentions that possibility, though, which is a pity.
