Localization and PB

I've been wanting to Localize my app for awhile but I don't really understand how this is done. I have read the documentation on Apple's website, but I couldn't find how to add an .lproj folder to my app in PB. Also, how exactly do I translate a menu item for example? Is there a way to find out which language is currently active and then check if my app supports it, and if it does then load the correct .nib file?
