Seems like if sheets are going to come out of textured windows there
should be a slot for them to come from. Maybe an animation where a dot
appears and widens into a slot which then allows the sheet to emerge
from the internal mechanism.
Did someone already complain about sheets on the calculator? The
convert menu selections put up sheets.
I am not offended by the metal look as some are but it seems like an
application like a browser which opens multiple windows is going to
really clutter the screen with metal. The browser could be considered
a 'physical device' which accesses the web but there aren't many
devices I can think of which duplicate themselves in your hands while
you are using them.
Having said that, I do like the look of Safari.
Finally,
isn't the HIG a Guide as opposed to a Law?

Actually, "sortof". The HIG says you shouldn't have a sheet come from
a window that doesn't have a title bar, because it would look like the
sheet came from "nowhere". That is to say, when there is a title bar,
there's a nice line dividing it from the rest of the window. Sheets
look like they come out from under this line, are anchored to this
line, and then appear to be "rolled up" under this line.
While textured windows have title bars, they have no line demarking
the bar from any other part of the window. Thus there is nothing for
the sheet to "roll under". It appears to pop out of the middle of the
brushed aluminum surface and then just float there like a dialog
(because there's no line there for it to anchor itself to, visually).
That's what makes it look jarring.
Anyway, in this case Apple is fallowing the letter of the law, but not
the spirit.
