And you can always modify the Nibs if you don't like them.
With Interface builder of course! It's very easy.

Personally, I have appreciated the Keynote's clean Aqua GUI without metal  sometimes Apple follows its own guidelines ;-) 
And maybe the final version of Safari will be white stripped remember the Sherlock 3 version released for the WWDC, it was metallized, and finally they revert to the white stripped style.
