Hi, I had asked the same question several weeks back and I received several recommendation to by the following book as an initial text:
Cocoa Programming for Mac OS X by Aaron Hillgrass

Then I purchased the book, "Cocoa Programming" by Scott Anguish et al, after reviewing it in a book store and seeing the reviews on Amazon.Com because it covered the intermediate to advanced stuff. Also, I can use this one as a handy reference. Please check the link below:

At this time, I would say buy the first book and work your way through the tutorials in it. Then you can buy the other book and/or similar book(s) that will take you through the intermediate to advanced concepts of Cocoa programming. Well, I must go and I wish you the best of luck.
