since such services (manipulation, inserting, etc.) only work in an environment where the application from which the service is called can handle the result, you won't see the grab service active in the finder, since the finder can not handle pictures.

launch textedit, convert to richt text, select "grab" from the services menu. or create a new mail message, type a word, select the service.

i may not have put it in proper english <g>, but since grab sends an image from the pasteboard to the application from which the service was invoked, it's only logical, that this application must be able to accept images. or rather: the field (text, etc.) which is currently active/focussed must be able to accept images.
