For your first problem, I guess the best way goes throug subclassing
NSTableHeaderView (or maybe NSTableHeaderCell?). As far as I understand the
principle of table views, this class is responsible for drawing the correct
NSTableColumn headers. In your subclass, it shouldn't be any problem to
either

- draw the table column headers without the border grid
- not drawing any table column header cells but drawing a single header cell
in the whole view
