I think what you're referring to are "sheets."

The menu bar is at the top of the screen on a Mac - sheets slide down from the title bar. I think I detect a recent "switcher!" Welcome aboard! ;-)

A URL where these things are discussed would be great.

They are discussed fairly thoroughly in most Cocoa books and documentation - the key is knowing what they're called.
