The application is a Digital Analogic Convertor Testor, and require very much system ressources. And there is maybe a lot of modifications to do, because the hardware we have to work with has changed...

Nothing prevents you from keeping the engine code in C when using Cocoa, so it's just a matter of what API you have the most experience with.
