Well, hopefully somebody will prove me wrong, but I think you're going to have to create a custom control. Even if you could "setDoubleAction" on your NSTextField, I don't believe it would receive the notification or event because it's not enabled.

This also sounds like it might be a violation of the ui guidelines, so you might want to reconsider the design of your window. Perhaps some external control such as a checkbox should control the graying of your NSTextField? Since I don't know anything about the situation that has led to you wanting to do this, I can't tell you it's definitely wrong, but the fact that the app kit controls can't do something without subclassing should probably give you pause.
