If you have little or no experience then don't bother going independent. You will likely burn some bridges with such experiments. My suggestion is to either get a job in a company or maybe even develop some good shareware and get yourself noticed in the mac community.

Alternatively, for your first outing put in a "proving" bid to the company - offer to do the project completely for free, in parallel to whoever else ends up landing the project. If you can produce a better result, and faster, and it's a notable company, that's all the reference and experience you'll need to get going proper. Plus you're likely to get an immediate grab at that particular company's next project, which can again help ease you in since you'll already know the people and how they like to work.

Don't do a (successful) project for free more than once though, otherwise you'll build up a reputation, and start to find companies trying to entice you with gimmicks rather than real pay.
