What about a rebirth of Commando, the GUI command builder that was in A/UX?

That would be very, very cool. I really liked that utility.

I suspect this would not be that hard to write, though you probably would not be using IB for much of it.

The present state of the art for wrapping command line tools appears to be Applescript Studio.
