Cocoa does not support Pascal. It is very difficult to develop applications for Mac OS X in Pascal unless you are willing to work strictly with command-line type applications.

Coming from Prograph I would suggest that you look in whether AppleScript studio <http://www.apple.com/applescript/studio/> or Real Basic (http://www.realbasic.com/) serve your needs.
