Someone else already mentioned the RFCs, which are essentially the last word on the formal protocol.

In addition, you might want to have a look at Pantomime - it's an open source framework for accessing both POP and IMAP servers, and sending mail with SMTP. It's written in Objective-C, and compiles against both Cocoa and GNUStep.
