I'm not sure if there is an AppleScript way to do this (it'd be cool if there was). You can select the item and set the color explicitly by bringing up the color panel (which I found by accident last week)


For that matter, why isn't color in Mail implemented exactly the same way labels in Finder are? - Have a "color" column that you can hide/show/sort (HSV sorting or something), and have an option to set the message color via contextual menu, like you can with labels?
