Emmanuel,

You have a couple of choices.  

1)  You can probably modify the Movie Controller Component in QuickTime to draw a different head on the controller.  This would probably be a non-trivial task.

2) Do not use the NSMovieView controller.  Instead add a NSSlider to your user interface and use a timer to keep the NSSlider in synch with your movie.
