Sound manipulation in Cocoa

What would be the best way to manipulate sound (AIFF or MP3, preferably), while using a Cocoa interface? The NSSound class seems to be fairly limited in what it can do, and I'm looking for stronger and more flexible tools. Would CoreAudio or Quicktime be the way to go? Or are there even tools available in Java? The type of manipulation I would like to perform would be speed and pitch manipulation, in addition to standard audio playback (i.e. iTunes or an MP3 player).
