When I have an embedded component I need to debug in the application that uses it, I create an "executable" in Xcode and assign that executable to the component's target. For example, to debug screen savers, it's possible to add System Preferences as an executable to the screen saver's target. That way, Xcode will launch System Preferences in the debugger, and it will break on breakpoints set in the component.

I haven't tried this with Interface Builder specifically, but that's what I'd recommend you try first. The only app I'm aware of where this _doesn't_ work is iTunes 4.x, which instantly quits if it detects it's being run in a debugger.
