The last time I looked, the NSTableView in IB had an option to be populated with dummy data. It's in the general preferences for IB. Check it out.

Given the number of things you're needing that tend require some knowledge of programming, you might want to hook yourself up with a knowledgeable programmer. It will save you a lot of trips to the mailing list.
