So, I'd say none. They don't hold data, they don't interact with the view. They could be considerer controllers I suppose if you absolutely have to put it someplace.

I emailed the original poster via private mail earlier today (dunno why) with the opinion that it's part of the controller layer (not to be confused with The Controller Layer). I don't think it's a controller itself, but it's a mechanism the controller uses to glue the model and view together. Namely, it transforms data into a form suitable for storage in the model and for display in the view.

I also mentioned that you can contrast these with formatters, which are just parts of the view. This is because they don't actually change the model's data, just the way it is displayed.

Just throwing out a different opinion.
