Andrew,
I do not know too much about the publishing market but I would go to a publisher like O'Reilly (www.oreilly.com). They publish their books both on-line and in print. They run the Mac Dev Center (www.macdevcenter.com) and can probably advise you better than anyone how to get it published. Maybe if you contributed to their articles part of the content of the book, they would take an interest, I do not know, but I'd look into it.
