NSMailDelivery with HTML

I'm not having any success sending HTML in an email using the NSMailDelivery framework. I've been able to send plain text messages, but whenever I set the Content-Type to "html/text" it doesn't stick and reverts to "text/plain; format=flowed; charset=US-ASCII" for the content-type.

I've also tried using the EDMessage framework without success.

Anyone have any examples/advice?
