Here's another question: I am getting into xcode, and IB etc. I started a new cocoa project, dbl clicked on MainMenu.nib, put a few things on the window that popped up, then closed that window, while playing around, and couldn't get it back. I looked in open recent, MainMenu.nib was there, but trying that, opening and closing IB didn't bring it back.

Is this a hidden way to force yourself to make a clean start?

If the nib is till open in IB, Xcode freaks out and doesn't know what to do for some reason and opens that silly window that shows you absolutely nothing. Just pop over to IB from the dock and all will be good.
