I may be wrong, but Mail and Safari seem to be using some private API from Launch Services:

_LSCopyDefaultSchemeHandlerURL
_LSSaveAndRefresh
_LSSetDefaultSchemeHandlerURL

Unfortunately, I haven't figured out how to use those functions. Has someone a clue?
