You don't need to. Just make sure you have all of them, and then double-click one of them. Finder will do the right thing.

Is this the "final" version?

It's a release version. There won't be a "final" version of Xcode unless we go out of business or come up with a different name for the product. ;-)

There's a final version of Project Builder, but not of Xcode.
