Do you have to do HashCash as a part of Mail, or could you implement some sort of local SMTP relay app that could do it for you? That would give you full control over the mail and let you display whatever UI you needed.

Well, no, because that just adds stamps to outgoing mail, whereas I also want to act on stamps on incoming mail - i.e. add a filter rule for them, and display relevant information in the various message views, etc. Plus, I need some way of setting the preferences regarding what to stamp and how, which would require a separate app if I didn't do it as a Mail plugin.
