what would be the best way to do an uninstaller, as my application has some data in the "Application Services" folder? Also, can I make my application delete itself?

Mac apps typically don't have uninstallers. The user can drag the app package to the trash, and all the stuff in Application Services is going to do is take up a little bit of disk space.

That said, if you still want to do it, having the app delete itself seems a little odd. I'd recommend either putting together an AppleScript or tiny separate app to do it instead.
