What about something like this? (note - written in Mail, untested, use at your own risk, etc.)

unichar aChar;
NSPopUpButton *button; // assume this was already initialized somewhere else

for (aChar = 'A' ; aChar <= 'Z' ; aChar++)
{
[button addItemWithTitle:[NSString stringWithCharacters:&aChar length:1]];
}
