Different features for different OSs

I've looked, but can't seem to find a definitive answer to this, and given that Tiger is only a few weeks away, I think now it's timely.

If I want to take advantage of new capabilities in one OS (in this case Tiger) but I don't want to abandon my current users (in this case Panther), how do I go about doing this? What techniques do I use to separate my code, and how can I tell the app at runtime which sections to use or not use?
