Don't know why your exclamation points don't work, but non-printing characters produce null glyphs. And null glyphs actually have a path in many fonts - usually a box, but an elegant question mark in Zapafino.

Try doing

<x-tad-bigger>appendBezierPathWithGlyphs:count:inFont: </x-tad-bigger>one glyph at a time, skipping the null glyphs.
