I defined all the readable and modifiable kinds of document in XCode and have no problem opening them from the application "Open ...." menu or with a drag 'n drop on the icon.

I would have expected the "open with ..." feature to come free after that ....

It should, but sometimes you need to 'encourage' Launch Services to update its caches. Have you restarted or deleted the cache files? (I don't remember where they're located, sorry) Do you have any older builds of your app laying around? That can confuse Launch Services as well.
