It's very easy: in Photoshop you make your "screenshots". Then in IB you can make invisible buttons for buttons in your "screenshot" that will load a new image or open a new window or something. It's very effective for creating demos (sometimes I think that's why Steve Jobs liked IB so much in the NeXTSTEP days). ;-)
