The problem is that I never paid attention to what methods or interface features I used that require 10.4. Is there a method to find out where code has to be change to support 10.3 and 10.4. In other words, a method or documention to locate all methods available only in Tiger that have the be checked before calling them in code that might run on 10.3 too?

You could use a combination of the 10.3.9 SDK plus setting all of the nib oldest targets to 10.3. That will at least show you what you need to do to obtain backward compatibility...
