See if this fits your needs: http://www.icculus.org/mojopatch/
I haven't used it but I know the author tends to be helpful and
responsive, and shipping apps are using it.

I'm in the planning and design stages of a rather large project. The
project is largely based off government standards which are frequent
to change. Being a long time Linux user I'm aware that make has the
ability to patch code and apply properly formated patches. My
question, with gcc on mac OS x and using cocoa what would be the best
way to patch my program so that the user needs to know very little of
whats going on (web based), and what design/planning should I do to
insure a scalable product. (If you can't tell this is my first big
project I'm 19 and work for a small Winbloz based company, but
hopefully I can change that :P ). Books or general ideas are what I'm
looking for, please don't think I'm asking to be spoon fed.
Thanks for your time and this list is definitely one of the reasons I
can write successfully for OS X,
