Yes, you can use space bar, arrows and Esc as menu short cuts.
It's slightly confusing in Interface Builder, because most key
equivalents can be entered using the Info -> Attributes panel. A few
keys -- such as space bar, arrows, Esc -- cannot be assigned with the
Attributes panel.
Here's how to apply the space bar, arrows and Esc to a menu item. In
Interface Builder, display the menu that contains the menu item for
which you want to assign the key equivalent. Then:

1) Single click on the menu item. It will highlight.
2) Double click to the right of the menu's title, until an enterable
area displays itself with a white border; this invisible area is to the
right of the menu item's title.
3) With the insertion point in this invisible area (except for its
white border), enter the key equivalent, while holding down the
modifier keys that go with that key equivalent.
4) The menu will now display the key equivalent you typed.

By the way, in order to remove a key equivalent entered the above way,
highlight and menu item and then open the Info window to the Attributes
panel. In the "Key equivalent" popup menu choose "<no key>".
