Is there any way to get this to work without the need for the manual binding? Ideally, I would like to select my JoystickView instance in IB and, in the binding inspector, see all of the properties provided by JoystickView. Or, in my case, I want to be able to see that "hue" is bindable.

Who knows... maybe this isn't possible (yet).

Modulo my previous comment about the advisability of binding to a view, yes you can create a palette item that exposes bindings. This has been discussed on the list within the last week or two (see thread "Problems with custom NSView subclass, IBPalette, and bindings support").
