I know of NSSound to READ and PLAY sound.

But I'd be happy to CONVERT and SAVE sound. Does Cocoa supply such
a service (target: 10.3 or earlier)?

More specifically, I'd like to convert AIFFs to MP3s or some other compact
cross platform format.

[Well, in fact, I don't know, if AIFF is a cross platform format. But because of

AIFF stands for Audio Interchange File Format and it's about as cross-platform as you can get. (It's a derivative of the Interchange File Format, or IFF, originally defined by Electronic Arts.) Apple was rather involved in the specification though, so much so that it has been called the Apple Interchange File Format.
