Please direct me to a doc or docs on using C++ and Apple's APIs.

Most modern APIs on OS X are either Objective C or vanilla C. There are no C++ API's that I'm aware of; certainly AppKit and Foundation are all ObjC. CoreFoundation is C, as is CoreGraphics and so forth.

All documentation is available at http://developer.apple.com/ documentation/, or in the file:///Developer/ADC Reference Library/ folder.
