Thanks for all the help!

I had searched Google before, but I reworded my search and came up with http://www.bergdesign.com/missing_cocoa_docs/nsclipview.html, which seemed to pretty succintly solve the problem by overriding NSClipView and basically doing what I had been doing before, but with from a NSClipView class instead of the view class itself.
