The default line height is a characteristic of the font. The actual line spacing can be controlled as an attribute of your text with NSParagraphStyle.

Read up on:


NSAttributedString
NSParagraphStyle

Note that the NSTextStorage associated with your NSTextView ,and holds your actual text, is a subclass of NSAttributedString.
