I may be mistaken, but I believe that the old versions of OSX (erg Jaguar,
Panther and all the interim versions) are still accessible somewhere on the
Apple website.
I know it sounds tedious, and probably is, but you might try downloading the
initial version of each new big cat (for want of a better collective noun)
and build your project under each one. That way you'd have an orderly
progression towards today's platform.
Now, I'm sure someone is going to take my suggestion to bits.....
