Yes, Apple Mail supports plugins but Apple did not release any
documentation for this, so you're alone with class-dump, but
depending what you are trying to do, it can be quite simple.
Take a look a GPGMail source code it will be helpfull.

Is there any Plugin support for Apple's Mail application ? Can we
write our own plugin and attach to the mail application to provide
some customized features to the mail application.
Note that, since this is an undocumented API it is subject to change
without notice. As if to reinforce this, Apple did change the API
slightly between 10.2 and 10.3 and changed it quite a bit more
between 10.3 and 10.4. If you go this route (as companies like PGP
have done) then you need to commit yourself to doing extensive
testing and expect to have to update the code on every new OS release.
Cheers,
Nicko
