OK, I figured this one out just after posting, by making a new project and experimenting/observing with it.

"File's Owner" is actually the NSDocument, at least for this project. The fact that the nib name is "MyDocument.nib" might have some relation to the fact that my class name is "MyDocument".

So I just should drag a line from File's Owner to my window, and then connect it via an outlet.

But I'm not sure if anything would go wrong if I renamed the class name, fixed the source code to match, and didn't update the nib. I'm not sure what would happen if if I did that. I don't suppose you can understand something without knowing what will happen when you don't do it properly ... So I probably won't understand this nib thing properly without trying to break it.
