Has anyone successfully built a Core Data (preferably Document based) app in Java? When I launch xcode I only see an option for Core Data that generates an Objective-C application. Can I create this project and then simply add java to it?

No, but you might be able to start with a Cocoa-Java application, then add the needed Core Data support. I have used this technique when I wanted to use some Java in a mostly ObjC project, and had it work well.

The biggest rough spot is looking at what is currently being done behind the scenes in the CD stationary, so you can duplicate it as needed.

The one area where you might run into a problem is the xcdatamodel compilation - I do not know if it must use a native target to compile that.
