I want some of these attributes to change the way that text is rendered. For instance I need an "all caps" attribute.

I haven't done that yet, so can't help with the particulars. But since I was very close to doing that a couple of times, I'd be interested in hearing about your results.

Is there any place I should be looking for help?

The moderator regularly posts an E-Mail with "Cocoa and List Resources" or something like that. It contains links to several handy sites with oodles of information. In particular, the cocoadev.com Wiki always contains lots of arcane information, so I'd probably start looking there whether anyone has done that or something similar that you can use as a basis for your work.
